Okay, I haven’t done one of these in a while, so be nice. 🙂
Here is my pureed lentils recipe for babies!

When Lila was about one, Daniel and I lived with my parents thanks to Hurricane Harvey flooding. So she ate like a champ – and so did we. ha!

Our Instant Pot is coming in incredibly handy these days. So far my specialty is an idea I stole from my mom: pureed lentils. The boys totally love it. In the most recent batch I added more ingredients than usual and decided it was the tastiest soup yet!

Lila also really likes lentils.

Ingredients
1 cup red lentils
2.5 cups water
1 tsp vegetable stock concentrate
1 yellow squash
1 zucchini
1 sweet onion
1 red bell pepper (green works, just isn’t as tasty IMO)
3-4 carrots
1 tsp oregano
Salt and pepper to taste (light)

Roughly chop up the ingredients and toss them into your instant pot.
Stir everything around.
Press “Soup.”
Vent your soup and removed the lid to let it cool a bit.
Blend it all up. (We recently acquired an immersion blender which has made blending the soup way easier!)

We don’t usually cook chicken since Daniel and I are vegetarians, but I purchased a roast chicken from the grocery store for the kids and have been adding shredded chicken into their soup. If it needs thickening we have also added Earth’s Best rice cereal just before feeding them.
