This time of year is filled to the brim with holiday parties! I’m extra thankful to be celebrating December with friends and family, but finding time to create a holiday appetizer or healthy quick dinner can often prove difficult. When my rollerderby teammates sent out the potluck sign up for our Christmas party after work on a Friday
, I immediately knew what I was bringing: Rich’s SeaPak Shrimp Spring Rolls.
Luckily I recently made the purchase during my last trip to Walmart because they are super delicious and take very little prep!
Perfect for a pre-party time crunch.
That Friday afternoon Daniel and I were in a pretty big rush. We were already attempting to make it to two
holiday parties [I must emphasize again that this is after work
], and then unexpectedly had to stop by the hospital to visit a friend. Needless to say: [aforementioned] TIME CRUNCH. As soon as we got home I flew through the door and set the oven to preheat, took care of the dogs, popped the SeaPak Spring Rolls
into the oven, and continued my party prep. The rolls beat me! While they were cooling
and Daniel lurked around the kitchen
I was able to finish my hair and makeup, toss them into a container with the sauce, and be on my merry way!
I arrived at my team’s holiday party just in time to put the SeaPak Shrimp Spring Rolls on a decorative dish and watch them disappear! With everyone hanging out in the kitchen I almost didn’t have enough time to grab a couple for myself – an instant hit!
After we all had our fill of holiday grubs, my teammates and I formed a giant circle in preparation for our White Elephant gift exchange. My second favorite part! [Let’s face it – everyone’s favorite part of a holiday party is the food!
I definitely lucked out and got exactly what I wanted. 🙂
The rollerderby holiday party is always a fun event. I’m glad I was able to connect with my teammates over delicious food and beverages during the off season. And the SeaPack Spring Rolls were a savory life saver when it came down to easy meal ideas!
