It’s no secret that I am a huge fan of all things coffee. I grew up in the habit of drinking cafe con leche at all hours. When I woke up at night my mom usually made me a cup and I’d fall back asleep. 🙂 And when my parents have friends over, they always end the meal with dessert and a cup of coffee. Now that I’m older, I am still drinking just as much coffee – it’s a way of life. My mom has preferred making Café Bustelo since I can remember – and the tradition continues. Café Bustelo isn’t just a delicious coffee, it can also serve as a yummy ingredient for a sweet treat, so I decided to try my hand at this Café Bustelo Mocha Cupcake recipe using ingredients I picked up from Walmart. Hot coffee along with this delicious recipe completes the meal – it’s the best part!
Usually I use box batters when I make cupcakes, but working from scratch, and using some of my favorite ingredients, was a fun and different experience. Plus, pairing the coffee infused cupcake with a cup of coffee itself is the perfect snack at any hour, in my opinion. Although if a little caffeine keeps you up, consider not making it a late night snack. 🙂
